That fresh juicy corn on the cob is beginning to fill the grocery stores and markets. The usual butter and salt is always satisfying but once you have Cajun Corn on the Cob you will never go back. The more flavour the merrier the eating right?! This recipe is simple to make and only takes a couple more minutes to get that tastier advantage! Most people enjoy eating it right on the cob, but feel free to shave the corn off these delicious cobs after roasting and pour them into a serving bowl and now you have a Cajun Corn Maque Choux minus the bacon and peppers. I can’t think of a better side dish in the summer than corn on the cob right?! 

Corn can be considered either a grain or a vegetable, based on when it is harvested. The maturity level of corn at harvest affects both its use at meals and its nutritional value. Corn on the Cob is the most simple and tastiest way to cook corn which is usually the other way around with most dishes. Aside from tomatoes, corn is one of the most grown vegetables due to it’s naturally sweet taste and cooking versatility. Yields: Party size -6 corn cobs
Prep Time: 5 minutes
Roasting Time: 45 minutes

 

Must Haves 

  • 6 corn on the cob
  • roasting pan
  • basting brush

 

WHAT TO GRAB

Cajun Sauce Ingredients

  • 1/4 cup cajun spice
  • 1 T cumin
  • 1 T seasoning salt
  • 1 T poultry seasoning
  • 1/4 cup melted vegan butter
  • 1/4 cup olive oil
Roasting Pan Ingredients
  • 1 cup water
  • 6 corn cobs

RECIPE INSTRUCTIONS

  1. Preheat the oven to 450F. 
  2. Peel back and remove the husks from the corn cobs. 
  3. Add all the cajun sauce ingredients into a cooking pot. Turn the burner to medium heat and mix while butter melts.  
  4. Add the corn to a roasting pot. Pour in 1 cup of water to the bottom of the pot. 
  5. Liberally baste all the corn cobs with the cajun sauce.  Cover the roasting pan with a lid and carefully place the pan into the oven. Roast the Cajun Corn on the Cob for 45 minutes. Enjoy fresh out of the oven.
