These are my most favourite granola bars I created so far. It is meant to be sweet, wholesome and filling. It could almost act as meal replacement for those busy days or quick snack. I love to add them in my picnic basket and because of the decadent chocolate topping my family has even enjoyed them for desert. However or whenever you will enjoy them.

Ingredients – Food Processor Ingredients
- 3/4 cup each, almonds, cashews, walnuts and dried cranberries
- 10 dried dates
- 10 dried apricots
- Bowl ingredients
- 1/4 cup maple syrup (optional for extra sweetness)
- 3/4 cup white sesame seeds
- 1/2 t cinnamon
- 1 cup gluten whole oats
- 1/4 t nutmeg
- 1 T vanilla extract
- 1 t sea salt
Melted Ingredients
- 1/4 cup semi sweet chocolate chips
- 1/4 cup melted organic coconut oil
- 1 cup melted peanut butter
Topping
- 2 T melted coconut oil
- 1/4 cup semi sweet chocolate chips
Must Have Equipment
- Electric Food Processor
Preparation
- Add a few cups of water to the lower pot of double boiler. Turner burner on to median heat. In the upper pot, add the coconut oil and melt. Add the chocolate chips and melt. Add the peanut butter and melt. Remove boiler pot from burner and set aside.
- In an electric food processor, add all of the food processor ingredients. Cover with lid and turn to high speed for 1 minute. Pour contents into a medium sized mixing bowl. Then add all of the ingredients listed under ‘bowl ingredients’ and stir thoroughly with a spoon. Then add all of the melted ingredients and mix thoroughly.
- Line a 8 x 8” pan with parchment paper. Pour all the ingredients from the mixing bowl into the pan, spread and press creating a flat surface. Place in the freezer for 10 minutes.
- Using the same double boiler, add the topping coconut oil. Turn the burner to medium heat and melt. Add the topping chocolate chips and melt. Remove granola mixture pan from the freezer and pour the chocolatey topping mixture evenly over the granola.
- Cover with a lid and chill for 2 hours. Remove granola from the fridge. Use a sharp knife to slice out 6 to 8 granola bars.
- Keep the granola bars cool by placing an ice bag in the picnic basket. These granola bars can be stored in the freezer for up to 2 months in an airtight container.
