Gluten Free Vegan Double Chocolate Cake

Yields: 9 inch 3 layer cake

Prep Time: 15 minutes

Bake Time: 28-30 minutes

Bake Temperature: 350F

MUST HAVES

  • 3, 9 inch cake pans
  • stand mixer
  • cooling rack

 

WHAT TO GRAB

Wet

 

  • vegan buttermilk ( 1 1/2 cups soy milk, 2 T apple cider vinegar)
  • 1 1/2 cups hot water
  • 1 cup vegetable oil

 

Dry

  • 1 1/2 cups dairy free cocoa powder
  • 3 cups sugar
  • 3 cups gluten free flour
  • 1 t baking soda
  • 3 T baking powder
  • 1 t sea salt

 

Rich Chocolate Frosting

  • 2 cups vegan butter
  • 1 cup cocoa powder
  • 2 T melted coconut oil
  • 1/2 cup melted vegan chocolate chips
  • 7 cups icing sugar
Cake Batter Instructions
  1. Preheat the oven. 
  2. Add a circular shaped parchment paper to fit the bottom of the cake pans and coat the inside walls of the pans with coconut oil. 
  3. Prepare the buttermilk and hot water, and measured vegetable oil and set aside
  4. In a large bowl add all the dry ingredients and mix well. Then add all the wet ingredients and whisk for 1 minute. Do not over mix. 
  5. Evenly pour the cake batter into the three 9 inch pans and place them in the middle rack of the oven. Bake for 28-30 minutes. Check with a toothpick to ensure it is baked in the last two minutes. If the toothpick is dry when you pull it out the cakes are ready. 
  6. Remove cakes from the oven and let cool for 10 minutes. 
  7. Remove cakes from the pans and set onto a cooling rack for 30 minutes. 
Frosting Instructions 
  1. After melting the coconut oil in a pot at low temperature add the chocolate chips and melt them slowly. Turn the burner off when melted and set aside. 
  2. Add the butter in the stand mixer bowl and cream the butter for 2 minutes. Begin adding the melted chocolate from the pot into the butter.
  3. Slowly add the cocoa and icing sugar and let the machine whip it well for roughly two minutes. 
Cake Decorating 
  1. Place one of the cakes onto a cake serving platter and apply 1/4 amount to the top. Top with the second cake and do the same. Apply the last cake and cover the entire top and sides with the remaining frosting while smoothing the icing using a spatula. Top with a couple berries and chill cake for 1 hour before serving.
