The Easter Bunny’s feet go hippity hop, hop. His big pink ears go flippity flop, flop. He is rushing on his way, to bring vegan Easter eggs, with a hop, flop, hop, flop, hop!
Spring is such a delightful time when the trees begin to bud and the air warms. Canadians embrace every new season but after a long winter, spring definitely generates the most excitement. Although the season renews every year, it is always a wonder to see the bees, birds, flowers, leaves and grass come to life once again. The famous little Easter bunny gets some well deserved attention too. Just thinking of the Easter Bunny still brings me much joy, as does the memory of my Mom’s scalloped potatoes, deviled eggs and mashed turnips. In my All Seasons Vegan cookbook I created a vegan Easter ham with a mustard maple glaze and smoky flavour. A version of mom’s almost famous scalloped potatoes and vegan deviled eggs are in the cook book too. How about vegan devilled eggs? I shaped them using potatoes and filled them with creamy mashed potatoes. The deviled potato eggs are delicious so I recommend making an extra batch if you buy the book.
I never felt the desire to decorate an Easter table this elaborately before. I think the energy in the heritage home had surely supported creativity. With one glance at this table, I wanted guests to feel the freshness of spring weather blooming outdoors, felt indoors. The delicate baby’s breath, green grass table runner and delicate spring flowers certainly captured just that!

The handmade round white mesh napkin rings. I wanted napkin rings to look similar to the egg nests I found also at Micheals. Nothing makes an egg statement quite like homemade chocolate Easter eggs sitting in a woven wooden basket. Recipes for my vegan Easter Eggs are in my cookbook, BUY BOOK HERE.
The silverware is a family heirloom from my husband’s side. This cherished cutlery compliments the Victorian styled dessert plates beautifully.
I am so in love with the cross-stitch pattern glassed chargers. I wanted an oversized charger and these ones are about 2 inches larger than others I have found in the past. They are frosted and have a gorgeous beaded rim. These beauties can be found on Amazon. I think I may buy a set in gold. They come in many colours and the quality is totally worth the price tag. Another sweet little find at Walmart are the white water jugs for holding the fresh baby’s breath. This Easter table will be a tough one to compete with next year. Super excited to try though.
