Raw Dreamy Lemon Squares

This recipe has been a family favourite for a few years now. This recipe may be a super easy dessert to make but it gets 5 star reviews for taste from those who try it. Often I like to make a couple batches of these squares because they are so easy to make and store for later enjoyment. Raw eating makes this dessert extra special with it’s locked in enzymes and purity. It has a very sharp lemon flavour, not to sweet and very creamy.

WHAT TO GRAB

Bottom crust

  • 1/2 cup heaping crushed almonds
  • 1/2 cup heaping crushed cashews
  • 5 pitted medjool dates
  • 1/4 cup melted coconut oil
  • 1/2 cup heaping unsweetened shredded coconut
  • 1/4 cup maple syrup

Raw Dreamy Lemon Square Filling

  • 1 1/2 cups cashews
  • 3/4 cup fresh lemon squeeze
  • 1 T vanilla extract
  • 1/4 cup melted coconut oil
  • 3 T milk alternative
  • 1/4 cup raw cane sugar

Garnish

  • 2 T lime or lemon rind

MUST HAVES

  • electric food processor
  • parchment paper

RECIPE INSTRUCTIONS

  1. Soak the cashews for the Raw Dreamy Lemon Square Filling in three cups of water and refrigerate overnight.
  2. To begin the bottom crust, place the almonds and cashews into a electric food processor. Cover with lid and press power to high speed for 1 minute.
  3. Add coconut oil to a small pot. Turn the burner to low heat and melt.
  4. Pour the remaining bottom crust ingredients into the blender including the oil from the pot.
  5. Place a sheet of parchment paper in a 8 x 8 pan. Pour the bottom crust mixture from the blender into the pan and press and flatten to cover the bottom of the pan.
  6. For the Raw Dreamy Lemon Filling, add the filling coconut oil into a small pot and turn the burner to low heat and melt.
  7. Remove soaked cashews from the fridge and drain the water. Add the cashews and all the other filling ingredients into the blender. Turn the blender on high speed for 1 minute or until the filling mixture becomes creamy. Pour the Raw Dreamy Lemon Filling over the bottom crust contents in the pan.
  8. Cover with appropriate lid and chill for 6 hours before serving. Slice into desired squares. Can be chilled in a seal tight container for up to 5 days or frozen for up to 3 months.
