Over the years my taste for spicy dishes has evolved. It seems to make most meals taste a little yummier if you know what I mean. If you are not one for spice, no worries as this recipe can be adjusted by removing or reducing the amount of jalapeno. This creamy salad pairs nicely with either home made baguette, crackers or salsa chips. Hey if you are thinking about Taco Tuesday or Nacho Friday, then pour this lovely salad right over the taco or nachos because it essentially includes all the ingredients used for both. I suggest swapping the parsley for cilantro in these cases.

Spicy Creamy Avocado Salsa
- Yields: 6 servings
- Prep Time: 10 minutes
Spicy Creamy Avocado Sauce Ingredients
- 2 limes, freshly squeezed
- 1/4 jalapeno
- 1/4 cup olive oil
- 1 T garlic clove, peeled and minced
- 2 T capers
- 1 1/2 medium sized avocados
Salsa Ingredients
- 1/3 cup fresh corn kernel, cooked
- 1/3 cup chives, finely chopped
- 1/2 cup red onions, finely chopped
- 1/4 cup Italian Parsley, finely chopped
- 5 cups fresh grape tomatoes, quarter sliced
Spicy Creamy Avocado Sauce Instructions
- Add all the Spicy Creamy Avocado Sauce ingredients into a high speed blender. Blend to a creamy texture and set aside.
Salsa Instructions
- Prepare the parsley, chives, grape tomatoes and red onions.
- Add all the salsa ingredients into a serving bowl.
- Pour in the Spicy Creamy Avocado Sauce into the bowl and toss well.
- For garnish, top with a sprig of parsley.
