Vegan Dill Dressing / Dip

  • T – is for Tablespoon
  • t – is for teaspoon
  • Yields: 2 large mugs
  • Prep Time: 2 minutes
  • Cook Time: approximately 5 minutes

Vegan Dill Dressing / Dip

  • Yields: 1 1/4 cups
  • Prep Time: 2 minutes
  • Soak Cashews- overnight

Must Haves

  • electric blender

Ingredients

  • 1/2 cup cashews
  • 1/4 cup fresh lemon squeeze or pickle juice
  • 1 tsp onion powder
  • 1 garlic clove
  • 3 T olive oil
  • if using lemon squeeze add 1/2 t sea salt

Instructions

  1. Prepare the cashews by pouring them into a bowl and cover with water. Chill overnight.
  2. When ready to make the dressing drain the water from the cashews and pour them into the blender.
  3. Chop the dill into smaller pieces and put into the blender.
  4. Add all the remaining ingredients and blend on high speed for 1 minute or until it resembles a creamy texture.
  5. Pour into a serving bowl and enjoy.
