Vegan Pumpkin Alfredo

WHAT TO GRAB

Saute Ingredients

  • 1/2 cup white onions, peeled, finely diced
  • 1 1/2 T minced garlic clove
  • 2 T olive oil

Blender Ingredients

  • 1 cup chic peas, cooked
  • 398ml pumpkin purée
  • 2 T olive oil

Other

  • 1/8 t clove powder
  • 1/8 t nutmeg powder
  • 1 t sage powder
  • 1 T sea salt
  • 1/4 t cinnamon
  • 1 T thyme, fresh sprig, finely chopped
  • 1/2 t onion powder
  • 2 dashes cayenne powder
  • 4 T nutritional yeast
  • 2 T brown sugar
  • 2 T olive oil

Cooking Instructions

  1. Add all the sauté ingredients into a frying pan. Turn burner to medium heat and begin storing with a wooden spoon. Occasionally stir while cooking for 5 to 8 minutes or until slightly golden.
  2. Add the cooked chic peas and pumpkin puree into a blender, then blend on high speed for 40 seconds or until it resembles liquid paste consistency.
  3. Add the contents from the frying pan and blender into a pot. Add all the other ingredients and give it a good stir. Cover with a lid and cook for 10 minutes while occasionally stirring.
  4. When ready pour the Vegan Pumpkin Alfredo Sauce over your favourite cooked pasta noodle, amount for six people.
