Smashed Chilli Baked Potatoes

Do you love crispy potato skins? Do you love double baked potatoes? This recipe calls for the whole baked potato not just the skins and is smashed, coated with butter, spices, chilli and double baked? I first came up with this idea with out smashing the potato. One evening I was feeling a little under the weather and wanted to keep things simple so I threw some russet potatoes in the oven. I remembered I had some left over chilli in the fridge from the night before and did not want to waste it. So I decided to just pour it over the baked potato and add a little salt and pepper. It tasted so good and my husband Dan and I feel in love with it. 

My husband loves potato skins and I can give them away no problem so we are good match when it comes to eating baked potatoes. That is where I had the thought to smash the whole baked potato and then add the chilli. No potato skins wasted this way on days when my husband was away at work.  I suggest using large russet potatoes for this recipe. I wanted the spices on the potato to compliment the chilli so I used smoky cajun spices.  When selecting tomatoes for the chilli, I recommend using fresh plum tomatoes as they are rich in flavour and usually pretty juicy.  Now if you care to kick up the heat in this recipe simply add two dashes of cayenne pepper to the chilli when adding the spices and the should do the trick. This recipe is gluten free, dairy free and 100% plant based.  Hope you enjoy this recipe as much as we do. Enjoy.

Prep Time: 20 minutes

Quick Chilli Cook Time: 15 minutes

Smashed Potatoes Cook Time:  70 minutes

WHAT TO GRAB

 

Quick Chilli Ingredients
  • 540g kidney beans
  • 156ml can tomato paste
  • juice of 1 lime
  • 1 cup diced plum tomatoes
  • 2 T olive oil
  • 1 t cumin powder
  • 1/4 t smoked paprika
  • 1 t sea salt
  • 1/2 t cracked pepper
Smashed Potato Ingredients
  • 6 russet potatoes
  • 1 t cajun seasoning
  • 1/2 t season salt
  • 1 t sea salt
  • 4 T olive oil

RECIPE INSTRUCTIONS

Chill Instructions

  1. Place all the chilli ingredients into a pot, mix well and cook on medium heat for 15 minutes. Set the pot aside when done. 

Smashed Potatoes Instructions

  1. Preheat the oven to 540F.
  2. Rinse the potatoes. Using a knife, poke a few holes into the potatoes and place them into the oven. 
  3. Bake for 60 minutes.
 

Preparing Smashed Potatoes Instructions

  1. Remove baked potatoes from the oven. Using oven mitts squeeze the potatoes to create an opening. Using a spatula, press the baked potatoes flat.
  2. Baste each baked potato with olive oil.
  3. Sprinkle the spices on each and place them back in the oven to bake for 10 minutes.
