Vegan Peach Pudding

  • Yields: 2 large mugs
  • Prep Time: 2 minutes
  • Cook Time: approximately 5 minutes

 

Vegan Peach Pudding 

Yields: 1 1/4 cups

Prep Time: 2 minutes

Soak Cashews- overnight

 

Must Haves

  • electric blender

 

Ingredients

  • 1 cup cashews
  • 1/4 cup fresh lemon squeeze
  • 1/4 cup maple syrup
  • 2 sweet peaches with peeling on

 

Instructions

  1. Prepare the cashews by pouring them into a bowl and cover with water. Chill overnight.
  2. When ready to make the dressing drain the water from the cashews and pour them into the blender.
  3. Discard pit from peaches.
  4. Add all the ingredients into the blender. Blend to pudding consistency.
